Gingerbread Recipe

Gingerbread is one of my favourite things to make now that I've sussed out the right mix of things!!

Here's my super easy recipe and method to make scrummy little Gingerbread people!!:

Ingredients (Makes approximately 10-15):

2tsp Ground Ginger
1tsp Ground Cinnamon
350g Plain Flour (a handful more is needed for rolling)
3tbsp Golden Syrup
125g Butter
1 Large Egg
1/2 tsp Baking Powder/Bicarbonate of Soda

White icing
Cake decorations of your choice

You will need:

2-3 baking trays
Grease proof paper
Gingerbread people cutters
Mixing bowl & Wooden spoon / Food mixer
Rolling pin

Method:

Start by mixing all of your dry ingredients in a large mixing bowl or in a food mixer until mixed evenly.

Add the butter to the dry ingredients and mix until the mixture becomes the texture of breadcrumbs.

The next step is to add the egg. Don't worry about mixing this in just yet!!

Heat a table spoon using a flame on your hob for around a minute. Now use this spoon to scoop 3 full table spoons of Golden Syrup into your mix. By heating the spoon your syrup will slip right off without causing too much mess!!

You can now mix the egg and syrup into your mixture until it starts to clump together. Leave this mixture in the fridge for 5-10 minutes.

Preheat the oven to 180C/350F/Gas 4 and line 2-3 baking trays with greaseproof paper.

Sprinkle flour over your surface and rolling pin ready for rolling.

Kneed the mixture into a nice round ball shape. If the mixture is sticking to your surface, add a little more flour. Roll the mixture into a rectangle or circle shape about half a centimetre thick.

Using your cutters, cut out your Gingerbread people shapes and place on your baking trays (leave at least 1 cm between each piece as they do expand slightly!!)

Bake your Gingerbread people for 10-15 minutes or until a deep golden brown colour.

Remove the Gingerbread from the trays when cooled to avoid breakage.

Once cool, decorate your Gingerbread people with white icing and cake decorations!!
