Mini Omelettes - Recipe


Once again, I've been experimenting in the kitchen. I was browsing the interweb to find something quick, easy and healthy to pop in my lunchbox or to eat on the go at lunch.
 
I came across an image on Pintrest of mini omelettes but unfortunately there was no recipe. Fortunately for you guys, I've trailed and tested a few things myself and have come up with my own!!
 
Ingredients:
 
4-5 eggs
200ml semi skimmed/skimmed milk
Fillings of your choice (ham, onion, tomato, peppers, bacon, mushrooms etc.)
Herbs (optional)
Reduced fat medium cheddar cheese (grated)
< 1 Cal. cooking spray
 
 
 
Things you'll need:
 
A cake tray/muffin tray
Whisk/fork
Measuring jug
 
 
How to bake:
 
Preheat your oven to 180.
 
Spray your cake tray with the 1 Cal. spray and rub around to coat the whole of the cases.
 
Whisk up your eggs and milk in the measuring jug that you used to measure your milk out with (save yourself some washing up!!).
   
Cut up your fillings and put around a teaspoon in each case, add your optional herbs at this point too. Top this off with a pinch of the grated cheese on top. 
 
Fill your cases with the whisked egg and milk leaving around 5mm from the rim to allow for expansion and to avoid spillages.  
                
Cook in the oven for 20-25 minutes or until golden brown. Check the egg has cooked completely by piercing with a knife; if its wet you need to cook for longer, if not you're good to go!!
 
Remove the cake tray and leave to cool. Your mini omelettes should pop out easily ready to eat!!
 
 
 
 
You can enjoy these little omelettes cold or heated!!
