Cinnamon Rolls - Recipe

 
I'm am the worst for thinking I can bake when in actual fact I most definitely can't!!
For months I have been craving Cinnamon Rolls (like the ones in Ikea!) but haven't been able to find any in my supermarket. As it was my day off work, I decided I'd attempt to make some!!
 
I thought they'd turn out terrible as the internet tells me they're not easy to make and I had to play around with ingredients as I didn't have everything the online recipes included.
Turns out they're not too difficult and although mine are various shapes and sizes, they still taste pretty damn good!!
 
Ingredients (makes 12):
 
Dough:
600g Plain Flour
120g Sugar
1teaspoon Salt
8g Yeast
250ml Whole Milk
80g Margarine
2 Large Eggs 
 
Filling:
150g Brown Sugar
2.5tablespoons Cinnamon

40g Margarine
 
Icing:
50g Philedelphia/Soft Cream Cheese
100g Margarine
200g Icing sugar
1teaspoon Vanilla extract  (not necessary)
 
 
Method:
 
First you want to heat your milk until it is warm but not boiling (warm enough that you can dip your finger in it) and dissolve your yeast within the milk.
Once the yeast has dissolved, you can add both eggs, your margarine, sugar and finally your flour.
 
When this concoction of ingredients is evenly mixed, knead the dough with your hands, cover the bowl with Clingfilm and allow to prove for 45 minutes - 1 hour.
 
During this time, you can prepare your filling. Beat your margarine until smooth. You can then either leave this to one side and mix the sugar and cinnamon separately or mix these 2 ingredients in with the margarine.
You can also prepare your baking tray(s). I prefer to use circular trays with tall sides as they keep the rolls rounder and gives them room to rise. Line your trays with baking paper and a thin lining of margarine.
 
Once your proving time is up, lightly flour your rolling surface and tip the dough on top. Roll your dough to about 1cm in a rectangular shape (this is tricky!!). Cut your edges so the dough is rectangular.

Now you can spread your margarine  (if you left it separate) followed by sprinkling a good thickness of your cinnamon/sugar on top. If you mixed all 3 ingredients, just spread it on top of the dough.
 
Roll your dough from one of the longer edges until you reach the other side. You can trim off the ends to make your rolls neater (i still bake these so there's no waste). Now cut your roll into 1.5 inch sections and lay closely on your baking tray(s).
 
Bake in your preheated oven for 20 minutes (or until golden brown).
 
You can use these 20 minutes to prepare your icing. Beat the margarine and Philedelphia until soft, then mix in your icing sugar and vanilla extract until it is a smooth consistency.
Once your 20 minutes is up and your rolls are looking golden, remove them from the oven and place onto cooling trays.

You can drizzle your icing whilst warm or wait until the rolls have cooled.
Voila!! Golden, plump, fluffy, cinnamon rolls!! (Almost as good as Ikeas's!!)
