Easy Low Carb Recipes - Broccoli and Stilton Soup


My body has been massively craving a strong kind of cheese for weeks, so I looked around for an easy recipe containing stilton and figured I'd try a broccoli and stilton soup.

There are many non low carb friendly recipes on the internet readily available so I took bits from a few and adapted my own recipe so it was low carb. 

Broccoli has a lot of carbs in like many vegetables, so keep an eye on how much you add to the mix and make sure this recipe fits your macros before eating.


Ingredients: (makes 4 servings)

750ml water
360g Broccoli
150ml heavy whipping cream
1 Pot vegetable stock
160g Stilton (or other blue cheese of choice)





Equipment:



Large pan
Measuring jug
Scales
Food blender / hand blender






Start by boiling your 750ml water in a large pan. Once boiling add your vegetable stock cube and mix until fully dissolved.



Add your broccoli florets to the water and stock mixture and let simmer for 20-25 minutes.



Once fully cooked, pour in your heavy whipping cream and break chunks of your stilton into the pan and mix for a further 2 minutes.



Remove the pan from the heat and use your hand blender (food blender) to blend all ingredients into a liquid and there you have low carb Broccoli and Stilton soup.
You can add salt and pepper to taste but remember to track in your app these extra ingredients.



I then like to measure out my soup and divide the total by 4 so I know exactly how much I can have and work out my macros per serving.
