Easy Low Carb Recipes - Protein Pancakes


Entering stage 2 of your Low Carb WOE is where things can get a little more adventurous. 
 
For my first few weeks in stage 2 (3rd and 4th week onwards of continuous Low Carb) I decided to play around with adding protein shakes/powders into my diet. 
My main reason for choosing to do this is that I don't like most lean meats and I wasn't hitting anywhere near my protein goal of 106g a day.

 
Ingredients:

3 eggs
45g protein powder (Low Carb powder)
1/4 tsp Baking Powder
0.5tsp Olive Oil
2tbsp liquid (water, heavy whipping cream, unsweetened almond/coconut milk).

Optional ingredients:

Sugar free chocolate chips
Chopped Nuts (low carb only)
Small amounts of berries
Sugar free syrup

Equipment:

Large bowl/Jug
Whisk
Frying pan 
Spoons / Scales / Scoop
                                                        
Beat your eggs in the bowl/jug, add 2tbsp water(other liquid ingredients) until mixed thoroughly and then add your Baking Powder, optional ingredients and Protein powder to the mix gradually to avoid lumps. Continue to mix for 1-2 minutes until the consistency is thick and even.

Heat your pan and add 0.5tsp of Olive Oil. Pour required amount of pancake mixture into the pan and fry on each side for around a minute or until solidified throughout. 


The Macros* for my method using Bulk Chocolate Cookie Protein powder and water are: 
Calories: 425
Protein: 53g
Fat: 20g
Carbs: 6g

Please ensure you track every ingredient to your tracker because all ingredients will differ slightly on macros.
